Description

These Zucchini Pizza Boats are a delicious and healthy low-carb alternative to traditional pizza. Hollowed-out zucchini halves are filled with marinara sauce, mozzarella, Parmesan, and pepperoni, then baked to cheesy, savory perfection. Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. This will ensure the zucchini boats bake evenly and don’t stick.
  2. Prepare zucchini boats: Wash the zucchini thoroughly and slice each one in half lengthwise. Use a spoon to scoop out the seeds from the center of each half, creating a hollowed well while leaving about a 1/4-inch thick border to hold the filling.
  3. Season zucchini: Lightly brush the cut sides of the zucchini with olive oil. Sprinkle salt, pepper, garlic powder, and Italian seasoning evenly over the zucchini to enhance flavor.
  4. Assemble the pizzas: Place the zucchini halves cut side up on the prepared baking sheet. Spoon approximately 2 tablespoons of marinara sauce into the well of each zucchini half.
