Ingredients
Scale
Wonton Cups
- 24 wonton wrappers
- Nonstick cooking spray
Taco Filling
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning
- 1/2 cup water
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
Toppings
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- Chopped green onions, for garnish
- Chopped cilantro, for garnish
Instructions
- Prepare Wonton Cups: Preheat your oven to 375°F (190°C) and spray a 12-cup muffin tin with nonstick cooking spray. Press one wonton wrapper into each muffin cup, then layer a second wrapper on top, turning it slightly to create a cup shape. Bake for 8–10 minutes until the wontons are lightly golden and crisp.
- Cook Taco Filling: While the wonton cups bake, heat a skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until fully browned. Drain any excess grease. Stir in the taco seasoning and water, then simmer the mixture for about 5 minutes to allow the flavors to meld.
- Add Beans and Corn: Mix black beans and corn into the seasoned meat filling. Stir well to combine and heat through.
- Assemble the Cups: Remove the baked wonton cups from the oven. Spoon the taco filling evenly into each cup, then top with a generous sprinkle of shredded cheddar and Monterey Jack cheeses.
- Final Bake: Return the muffin tin to the oven and bake for an additional 5–7 minutes, or until the cheese has melted and is bubbly.
- Garnish and Serve: Remove the wonton taco cups from the oven and let them cool slightly. Top each cup with sour cream, salsa, chopped green onions, and cilantro before serving.
Notes
