Description

This Whole Roasted Cauliflower recipe features a beautifully roasted cauliflower head coated in a savory blend of butter, olive oil, garlic, and Italian seasoning, finished with a golden Parmesan crust. It’s an impressive, flavorful vegetarian dish perfect as a side or a centerpiece for any meal.

Ingredients

Scale

Main Ingredients

  • 1 head of cauliflower (leaves removed)
  • 2 Tbsp. butter (melted, or dairy-free butter alternative*)
  • 2 Tbsp. olive oil
  • ½ tsp. salt (to taste)
  • ¼ tsp. pepper (to taste)
  • 1 tsp. Italian seasoning
  • 2 cloves garlic (crushed)
  • 2-3 Tbsp. grated Parmesan cheese (dairy-free if needed**)
  • Parsley (fresh, finely chopped, for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (204°C) to ensure it is ready for roasting the cauliflower.
  2. Prepare the Cauliflower: Remove the leaves and cut off the thick white stalk from the base of the cauliflower head to create a flat surface for even roasting.
  3. Make the Butter and Herb Sauce: In a small bowl, whisk together melted butter, olive oil, salt, pepper, Italian seasoning, and crushed garlic until well combined.
  4. Coat the Cauliflower: Place the cauliflower head in a dutch oven or a suitable baking dish. Using a basting brush, generously coat the cauliflower with about three-quarters of the butter and herb sauce. Reserve the remainder for later.
  5. Roast Covered: Cover the cauliflower head with aluminum foil and roast in the preheated oven for 30 minutes to soften it and infuse flavors.
  6. Roast Uncovered: Remove the foil and continue roasting uncovered for an additional 10-20 minutes, allowing the cauliflower to brown and become tender.
  7. Add Cheese and Broil: Brush the remaining butter and herb sauce over the cauliflower, sprinkle the grated Parmesan cheese evenly on top, then set the oven to broil on high. Broil for 3-5 minutes until the cheese turns a golden brown and crispy.
  8. Garnish and Serve: Remove from the oven, garnish with fresh chopped parsley and extra Parmesan cheese if desired. Serve warm and enjoy this delicious roasted cauliflower.

Notes

  • You can substitute dairy-free butter and Parmesan cheese to make this recipe vegan and dairy-free friendly.
  • If you do not have a dutch oven, use a deep baking dish that can hold the cauliflower comfortably.
  • Be cautious when broiling; watch closely to avoid burning the cheese.
  • Leftovers can be refrigerated and enjoy reheated or cold.
  • Adjust seasoning and cheese quantity to your taste preference.
