  • 1 1/2 cups sweetened shredded coconut
  • 1 cup chopped pecans

Frosting (optional):

  • 1/2 cup unsalted butter
  • 4 oz white chocolate, melted
  • 3–4 cups powdered sugar
  • 2–3 tablespoons heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven and prepare pans: Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans or line with parchment paper.
  2. Prepare cake: Whisk together flour, baking powder, baking soda, and salt. Cream butter and sugar, then add egg whites, extracts, and melted white chocolate. Alternate adding flour mixture and buttermilk, then fold in sour cream. Divide batter among pans and bake for 25–30 minutes. Cool completely.
  3. Make filling: Cook evaporated milk, sugar, egg yolks, and butter until thickened. Stir in vanilla, coconut, and pecans. Cool.
  4. Prepare frosting: Beat butter, add melted white chocolate, then mix in powdered sugar and cream until desired consistency. Stir in vanilla.
