Ingredients
Scale
Potatoes
- 4 large potatoes
Seasonings and Mix-Ins
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 cup grated Parmesan cheese
Garnish
- Chopped fresh parsley for garnish
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) to prepare for baking the potatoes.
- Prepare and bake potatoes: Scrub the potatoes clean and pierce each potato several times with a fork. Rub them evenly with olive oil, then season with salt and pepper. Arrange them on a baking sheet and bake for 45-60 minutes until they are tender inside.
- Cool and scoop potatoes: Remove the baked potatoes from the oven and allow them to cool slightly so they are easier to handle. Cut each potato in half lengthwise and carefully scoop out the flesh, leaving a thin layer attached to the skin to maintain structure.
- Prepare the filling: In a mixing bowl, combine the scooped potato flesh with minced garlic, paprika, and grated Parmesan cheese. Season the mixture further with salt and pepper to your taste and mix until well blended.
- Stuff and bake again: Spoon the potato mixture back evenly into each potato skin half. Place them on the baking sheet and return to the oven to bake for another 15-20 minutes until the tops are golden brown and crispy.
- Garnish and serve: Once out of the oven, sprinkle chopped fresh parsley over the top of the stuffed potatoes for a fresh, colorful garnish. Serve warm as a delicious side dish.
Notes
- Be careful not to scoop out too much flesh; leaving a thin layer in the skin helps the potato hold its shape during the second bake.
- Feel free to add other seasonings such as chives or smoked paprika for additional flavor variations.
- This recipe pairs well with roasted turkey or grilled meats for a hearty holiday meal.
- Using a fork to pierce the potatoes helps steam escape while baking for even cooking.
