Description

  • 20 oz ground turkey

  • 1 carrot
  • 1 stalk celery
  • 2 cloves garlic
  • 1 egg
  • 2 tablespoons ketchup, plus additional for topping
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 375º F (190º C). Line a muffin tin with silicone muffin liners or lightly grease each cavity to prevent sticking.
  2. Process Vegetables: Add the carrot, celery, and garlic to a food processor and pulse until minced into small pieces, about 10 seconds. Alternatively, you can finely chop the vegetables by hand or use a food chopper.
  3. Combine Ingredients: In a large mixing bowl, combine the minced vegetables, oats, egg, 2 tablespoons of ketchup, salt, and onion powder.   4. Fill Muffin Tin: Divide the mixture evenly among the muffin cavities, filling each one about full.
  5. Add Ketchup Topping: Spoon a small amount of ketchup on top of each meatloaf muffin. Use the back of a spoon to spread it evenly, creating a thin layer on top.
  6. Bake: Place the muffin tin in the oven and bake for 22 to 25 minutes, or until the meatloaf muffins are fully cooked throughout.
