Meatloaf Mixture
- 20 oz ground turkey
- 1/2 cup quick or old fashioned oats
- 1 carrot
- 1 stalk celery
- 2 cloves garlic
- 1 egg
- 2 tablespoons ketchup, plus additional for topping
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 375º F (190º C). Line a muffin tin with silicone muffin liners or lightly grease each cavity to prevent sticking.
- Process Vegetables: Add the carrot, celery, and garlic to a food processor and pulse until minced into small pieces, about 10 seconds. Alternatively, you can finely chop the vegetables by hand or use a food chopper.
- Combine Ingredients: In a large mixing bowl, combine the minced vegetables, oats, egg, 2 tablespoons of ketchup, salt, and onion powder. Add the ground turkey and gently mix with a large spoon or your hands just until everything is combined and sticking together. Avoid overmixing to keep the meatloaf tender and not dense.
- Fill Muffin Tin: Divide the mixture evenly among the muffin cavities, filling each one about full.
- Add Ketchup Topping: Spoon a small amount of ketchup on top of each meatloaf muffin. Use the back of a spoon to spread it evenly, creating a thin layer on top.
- Bake: Place the muffin tin in the oven and bake for 22 to 25 minutes, or until the meatloaf muffins are fully cooked throughout.
- Serve or Store: Serve the meatloaf muffins immediately or let them cool and store in an airtight container in the refrigerator for meal prep.
