  • 1 tablespoon balsamic vinegar
  • Salt and black pepper to taste

  • 1 garlic clove, peeled and halved

Instructions

  1. Preheat and Toast Bread: Preheat your oven to 400°F (200°C). Arrange the bread slices evenly on a baking sheet and toast them in the oven for 5 to 7 minutes until they are golden and crisp.
  2. Garlic Rub: While the bread slices are still warm, gently rub the top of each piece with the cut side of the garlic clove to infuse a subtle garlic aroma and flavor.
  3. Prepare Tomato Mixture: In a bowl, combine the halved cherry tomatoes with olive oil, balsamic vinegar, salt, and black pepper. Lightly mash the tomatoes with a fork to release their juices and create a flavorful topping.
  4. Assemble Bruschetta: Spread a thin, even layer of nduja on each toasted bread slice. Then top each with a generous spoonful of the tomato mixture.

Notes

  • For a milder flavor, reduce the amount of nduja or mix it with some mascarpone cheese to mellow the spice.
  • If cherry tomatoes are not available, heirloom or Roma tomatoes make an excellent substitute.
