Instructions

  1. Prepare the truffle mixture: In a mixing bowl, combine the crushed ladyfinger cookies, mascarpone cheese, cooled espresso, coffee liqueur (if using), vanilla extract, powdered sugar, and a pinch of salt. Mix thoroughly until a soft, moldable dough forms.
  2. Chill the mixture: Cover the bowl and refrigerate for 30 minutes to allow the mixture to firm up for easier handling.
  3. Form the truffles: Once chilled, scoop small portions of the mixture and roll them into 1-inch balls using your hands. Place each ball onto a parchment-lined baking sheet.
  4. Freeze the truffles: Freeze the shaped truffles for 15 minutes to help them set and maintain their shape while coating.
  5. Melt the chocolate: Gently melt the white or dark chocolate chips using a double boiler or microwave in 30-second intervals until smooth and fully melted.
  6. Coat the truffles: Dip each chilled truffle into the melted chocolate, using a fork to lift and allow excess chocolate to drip off. Return the coated truffle to the parchment-lined sheet.
