Description

  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup water

Mascarpone Filling:

  • 8 oz mascarpone cheese
  • 4 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract

Coffee Soaking Mixture:

  • 1/2 cup strong brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)

Additional:

  • 1 tablespoon unsweetened cocoa powder for dusting

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking pan with parchment paper.
  2. Prepare Brownie Layer: Combine brownie mix, oil, eggs, and water in a large bowl. Pour half the batter into the pan.
  3. Make Mascarpone Filling: Beat mascarpone, cream cheese, sugar, egg yolk, flour, and vanilla until smooth.
  4. Prepare Coffee Soaking Mixture: Mix coffee with coffee liqueur.
  5. Layer and Bake: Brush half of the coffee mixture over the brownie, add mascarpone filling, top with remaining brownie batter, swirl, and brush with remaining coffee. Bake for 35-40 minutes.
  6. Cool and Chill: Cool in the pan, then refrigerate for at least 2 hours.
  7. Final Touch: Dust with cocoa powder before serving.
