  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup thinly sliced bell pepper (red, yellow, or both)

  • ½ cup chopped roasted peanuts
  • Lime wedges, for serving


Instructions

  1. Make the Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha (if using), garlic, and enough warm water to reach a smooth, pourable consistency.
  2. Layer the Jars: Divide the peanut sauce evenly among 4 large mason jars, placing it as the bottom layer.
  3. Add Chicken: Place the cooked chicken breast on top of the peanut sauce in each jar, allowing it to soak slightly in the sauce.
  4. Add Noodles and Vegetables: Add the cooked and cooled rice noodles next, followed by shredded carrots, sliced cucumber, and thinly sliced bell pepper in each jar.
  5. Top with Fresh Herbs and Nuts: Sprinkle the chopped fresh cilantro and chopped roasted peanuts on top to keep them fresh and crunchy.
