Description

This Taco Lasagna Recipe combines the flavors of tacos with the ease of a casserole. Layers of seasoned ground beef, beans, corn, cheese, and salsa are stacked between flour tortillas for a delicious twist on traditional lasagna.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 cups salsa

Layering:

  • 2 cups shredded Mexican cheese blend
  • 6 large flour tortillas
  • Nonstick cooking spray

Optional Toppings:

  • Sour cream
  • Chopped cilantro
  • Diced tomatoes
  • Sliced jalapeños

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook Beef: Brown ground beef and onion in a skillet. Add taco seasoning and water, then mix in black beans and corn.
  3. Layer Ingredients: Spread salsa in the baking dish. Layer tortillas, beef mixture, salsa, and cheese three times.
  4. Bake: Cover with foil and bake for 20 minutes, then uncover and bake for 10 more minutes.
  5. Rest and Serve: Let it rest for 10 minutes before slicing. Serve with desired toppings.

Notes

  • You can use ground turkey or chicken instead of beef.
  • For extra heat, opt for hot salsa or add cayenne pepper to the meat mix.
