This Taco Lasagna Recipe combines the flavors of tacos with the ease of a casserole. Layers of seasoned ground beef, beans, corn, cheese, and salsa are stacked between flour tortillas for a delicious twist on traditional lasagna.

Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 2 cups salsa
Layering:
- 2 cups shredded Mexican cheese blend
- 6 large flour tortillas
- Nonstick cooking spray
Optional Toppings:
- Sour cream
- Chopped cilantro
- Diced tomatoes
- Sliced jalapeños
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook Beef: Brown ground beef and onion in a skillet. Add taco seasoning and water, then mix in black beans and corn.
- Layer Ingredients: Spread salsa in the baking dish. Layer tortillas, beef mixture, salsa, and cheese three times.
- Bake: Cover with foil and bake for 20 minutes, then uncover and bake for 10 more minutes.
- Rest and Serve: Let it rest for 10 minutes before slicing. Serve with desired toppings.
Notes
- You can use ground turkey or chicken instead of beef.
- For extra heat, opt for hot salsa or add cayenne pepper to the meat mix.
