A perfect appetizer or party snack that’s both easy to prepare and crowd-pleasing.

Ingredients

Scale

Main Ingredients

  • 8 ounces cream cheese (softened and cut into smaller pieces)
  • 16 ounces cremini stuffer mushrooms
  • 2 tablespoons butter
  • 1/2 medium onion (chopped finely)
  • 4 cloves garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 tablespoon chopped fresh thyme
  • 2 tablespoons chopped fresh parsley
  • 1/3 cup Italian seasoned breadcrumbs
  • Salt & pepper (to taste)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and position the oven rack in the middle.
  2. Soften Cream Cheese: Microwave the cream cheese in 20-30 second intervals until very soft and easy to stir.
  3. Prepare Mushrooms: Remove the stems from the mushrooms. Chop the stems finely, trimming off any woody tips and discarding them.
  4. Sauté Vegetables: Melt butter in a skillet over medium heat. Add the chopped mushroom stems and finely chopped onions. Cook for 7-10 minutes, stirring occasionally, until the mixture is lightly browned and most of the moisture has evaporated.
  5. Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant.
  6. Create Filling: Remove the skillet from heat. Mix in the softened cream cheese until fully incorporated. Then add the grated Parmesan cheese, chopped thyme, parsley, and Italian seasoned breadcrumbs. Season with salt and pepper to taste and mix well.
  7. Stuff Mushrooms: Using a small spoon or your hands, firmly pack the cream cheese mixture into each mushroom cap. Arrange the stuffed mushrooms on a baking sheet coated with cooking spray. For easier cleanup, you may line the baking sheet with foil.
  8. Bake: Bake the mushrooms uncovered for 20-25 minutes until they are cooked through and golden on top. Larger mushrooms may require a few extra minutes.

Notes

  • To clean the mushrooms, gently wipe them with a damp paper towel or soft brush. Avoid soaking them in water.
  • If your mushrooms are very large, the baking time may need to be extended slightly.
  • Line the baking sheet with foil for easy cleanup.
  • The recipe yields approximately 8 stuffed mushrooms, perfect as an appetizer for 4-6 people depending on serving size.
