- 1/4 cup chopped fresh cilantro
For the Dressing:
- 3 tablespoons mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- In a large bowl, combine the green cabbage, purple cabbage, pineapple, carrots, red onion, jalapeño, and cilantro. Mix well.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, lime juice, honey, salt, black pepper, and red pepper flakes until smooth.
- Pour the dressing over the cabbage mixture and toss until evenly coated.
- Let the slaw sit for at least 15 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For a vegan version, substitute vegan mayo and maple syrup for the honey.
