This dish offers a perfect balance of heat, sweetness, and tanginess, garnished with fresh cilantro and green onions for added freshness.

Ingredients

Scale

Noodles

  • 200 grams rice noodles

Sauce and Toppings

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 can (400ml) coconut milk
  • 1 cup vegetable broth
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon chili flakes
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1 tablespoon peanut butter
  • 1 tablespoon sriracha sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the rice noodles: Bring a pot of water to a boil and cook the rice noodles according to the package instructions until tender. Drain the noodles and set them aside.
  2. Prepare aromatics in pan: Heat a large pan or wok over medium heat and add the vegetable oil. Once hot, add minced garlic and ginger and sauté for 1-2 minutes until fragrant.
  3. Add red curry paste: Stir in the red curry paste and cook for another 1-2 minutes to meld the flavors.
  4. Combine sauces: Pour in the soy sauce and sesame oil, stirring to combine with garlic, ginger, and curry paste.
  5. Add liquids: Slowly add coconut milk to the pan while stirring constantly to blend the flavors smoothly.
  6. Add broth and seasonings: Pour in vegetable broth, then add brown sugar, lime juice, chili flakes, salt, and black pepper. Stir until sugar dissolves.
  7. Simmer sauce: Bring the sauce to a simmer and cook for 3-5 minutes to thicken slightly and develop deeper flavor.
  8. Toss noodles in sauce: Add the cooked rice noodles to the pan and toss well to coat them evenly with the sauce.
  9. Add peanut butter: Stir in the peanut butter until it melts into the sauce, creating a creamy texture.
  10. Add sriracha and adjust seasoning: Mix in sriracha sauce and taste the noodles; adjust salt, pepper, or lime juice as needed for desired flavor.
  11. Garnish and serve: Remove the pan from heat, sprinkle chopped cilantro and green onions over the top, and serve immediately with extra garnish if desired.

Notes

  • Adjust the amount of chili flakes and sriracha to control the spiciness level.
  • Use gluten-free soy sauce to make this recipe gluten-free.
  • For a richer flavor, use full-fat coconut milk.
  • Cook noodles just until tender to prevent overcooking when combined with sauce.
  • Garnishes like crushed peanuts or lime wedges make excellent additions.
