- 1 teaspoon chili flakes
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 1 tablespoon peanut butter
- 1 tablespoon sriracha sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook the rice noodles: Bring a pot of water to a boil and cook the rice noodles according to the package instructions until tender. Drain the noodles and set them aside.
- Prepare aromatics in pan: Heat a large pan or wok over medium heat and add the vegetable oil. Once hot, add minced garlic and ginger and sauté for 1-2 minutes until fragrant.
- Add red curry paste: Stir in the red curry paste and cook for another 1-2 minutes to meld the flavors.
- Combine sauces: Pour in the soy sauce and sesame oil, stirring to combine with garlic, ginger, and curry paste.
- Add liquids: Slowly add coconut milk to the pan while stirring constantly to blend the flavors smoothly.
- Add broth and seasonings: Pour in vegetable broth, then add brown sugar, lime juice, chili flakes, salt, and black pepper. Stir until sugar dissolves.
- Simmer sauce: Bring the sauce to a simmer and cook for 3-5 minutes to thicken slightly and develop deeper flavor.
- Toss noodles in sauce: Add the cooked rice noodles to the pan and toss well to coat them evenly with the sauce.
- Add peanut butter: Stir in the peanut butter until it melts into the sauce, creating a creamy texture.
- Add sriracha and adjust seasoning: Mix in sriracha sauce and taste the noodles; adjust salt, pepper, or lime juice as needed for desired flavor.
- Garnish and serve: Remove the pan from heat, sprinkle chopped cilantro and green onions over the top, and serve immediately with extra garnish if desired.
