  • 1 cup fresh raspberries
  • 1/2 cup freshly squeezed lemon juice (about 3–4 lemons)
  • 1/3 cup honey or granulated sugar
  • 3 cups cold sparkling water
  • 1 cup cold still water
  • Ice cubes
  • Lemon slices and extra raspberries for garnish
  • Fresh mint (optional)


Instructions

  1. Make Raspberry Syrup: In a small saucepan, combine the fresh raspberries, honey or sugar, and 1 cup cold still water. Heat over medium heat and bring to a simmer, stirring occasionally until the raspberries break down and the mixture thickens into a syrupy consistency, about 5 to 7 minutes.
  2. Strain the Syrup: Remove the saucepan from heat and allow the mixture to cool slightly. Pour the mixture through a fine mesh sieve into a pitcher to remove seeds and pulp, pressing gently to extract all the liquid.
  3. Add Lemon Juice: Stir in the freshly squeezed lemon juice into the strained raspberry syrup.
  4. Combine with Sparkling Water: Just before serving, add the 3 cups of cold sparkling water to the pitcher and mix gently to combine without losing the fizz.
  5. Serve and Garnish: Fill glasses with ice cubes, pour the sparkling raspberry lemonade over the ice, and garnish with lemon slices, whole raspberries, and fresh mint leaves if desired. Serve immediately for the best taste and fizz.
