Description

A hearty and comforting Slow Cooker Poor Man’s Stew featuring ground beef, potatoes, carrots, and flavorful seasonings, perfect for an easy, hands-off meal that feeds six.

Ingredients

Scale

Main Ingredients

  • 1 lb. Ground Beef (browned and drained of excess grease)
  • 1 & 1/2 lb Yukon Potatoes (chopped)
  • 4 large Carrots (cut into 1/2” slices)
  • 1 medium Onion (diced)
  • 14.5 oz. Italian Diced Tomatoes (not drained)
  • 2 cups beef broth

Seasonings

  • 1 tablespoon Worcestershire Sauce
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. Prepare the Ingredients: Brown the ground beef in a skillet over medium heat until fully cooked, then drain excess grease to avoid a greasy stew.
  2. Combine in Slow Cooker: Add the sliced carrots, chopped Yukon potatoes, diced onions, Italian diced tomatoes (including juices), and browned ground beef into the slow cooker crockpot.
  3. Add Liquids and Seasonings: Stir in the beef broth, Worcestershire sauce, garlic powder, Italian seasoning, onion powder, salt, and black pepper until well combined.
  4. Cook the Stew: Cover and cook on low heat for 6 to 7 hours or on high heat for 3 to 4 hours, allowing flavors to meld and vegetables to become tender.
  5. Serve and Enjoy: Once cooked, ladle the stew into bowls and serve with fresh dinner rolls for a complete and satisfying meal.

Notes

  • For a thicker stew, you can mash some of the potatoes against the side of the slow cooker before serving.
  • Adjust salt and seasoning to taste before serving.
  • While the recipe calls for ground beef, ground turkey or a plant-based substitute can be used for a different twist.
  • Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
