Ingredients
Scale
Ingredients
- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced into ¼-inch rounds
- 1 pound baby potatoes, halved or quartered
- ¾ pound fresh green beans, trimmed
- 1 small onion, sliced
- 2 garlic cloves, minced
- ½ teaspoon paprika
- Salt and black pepper to taste
- ¼ cup water or chicken broth
- Chopped fresh parsley (optional, for garnish)
Instructions
- Brown the sausage: Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned on both sides, about 5–6 minutes. Remove the sausage from the skillet and set aside.
- Sauté the potatoes: In the same skillet, add the baby potatoes and sauté for 8–10 minutes until golden brown, stirring occasionally to prevent sticking and ensure even cooking.
- Add onion and garlic: Add the sliced onion and minced garlic to the skillet, cooking for another 2 minutes until fragrant and slightly softened.
- Cook green beans and season: Add the fresh green beans, paprika, salt, and black pepper to the skillet. Pour in the water or chicken broth, then cover the skillet to steam the vegetables for 8–10 minutes until the green beans and potatoes are tender.
- Combine and finish cooking: Return the browned sausage to the skillet, stirring well to combine all ingredients. Cook uncovered for 2–3 more minutes until everything is heated through and flavors meld.
- Garnish and serve: Optionally sprinkle with chopped fresh parsley for a pop of color and fresh flavor. Serve warm as a satisfying main course or a hearty side dish.
Notes
- You can substitute kielbasa, andouille, or any fully cooked sausage for smoked sausage.
- For extra flavor, sprinkle with red pepper flakes or add a splash of apple cider vinegar before serving.
- This dish works great as a one-pan dinner or as a savory, filling side dish.
