Dough

  • 3 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 teaspoon kosher salt
  • ½ cup warm whole milk (about 110°F)
  • 3 large eggs (room temperature)
  • ½ cup unsalted butter (softened and cubed)

Honey Sage Butter

  • 2 tablespoons finely chopped fresh sage
  • 3 tablespoons honey
  • ¼ cup salted butter (melted)

Topping

  • Flaky sea salt (for topping)


Instructions

  1. Prepare the Dough: In the stand mixer bowl fitted with a dough hook, combine the flour, sugar, yeast, and kosher salt. Add warm milk and eggs, then mix on low speed until the dough starts to come together.
  2. Knead the Dough: Increase mixer speed to medium and knead for about 5 minutes. Gradually add softened unsalted butter, a few pieces at a time, allowing incorporation before adding more. Continue kneading until the dough is smooth and elastic, about 8–10 minutes total.
  3. First Rise: Cover the bowl with a clean towel and let the dough rise in a warm place until doubled in size, about 1 to 1 ½ hours.
  4. Shape Rolls: Punch down the dough and divide it into 12 equal portions. Shape each portion into a smooth ball and place them in a greased 9×13-inch baking dish.
  5. Second Rise: Cover the rolls loosely and allow them to rise again until puffy, about 45 minutes.
  6. Preheat Oven & Prepare Butter: Preheat the oven to 350°F. In a small saucepan, melt salted butter with chopped fresh sage and honey. Simmer for 1–2 minutes to infuse flavors.
  7. Brush Rolls Before Baking: Brush half of the honey sage butter over the risen rolls before putting them in the oven.
  8. Bake: Bake rolls for 20–25 minutes, or until golden brown and cooked through.
  9. Finish Rolls: Remove from oven and immediately brush the remaining honey sage butter over the hot rolls. Sprinkle with flaky sea salt.
  10. Serve: Serve rolls warm for best flavor and texture.
