Description

This Rotisserie Chicken BBQ Flatbread is a quick and delicious main course that combines tender shredded rotisserie chicken with tangy barbecue sauce, melty mozzarella and cheddar cheeses, and fresh red onion on crispy flatbreads. Perfect for an easy weeknight dinner, it offers a savory, smoky flavor finished with fresh cilantro and an extra drizzle of barbecue sauce.

Flatbread Base

  • 2 flatbreads or naan
  • Olive oil for brushing
  • Salt and pepper to taste

Chicken Topping

  • 1 1/2 cups shredded rotisserie chicken
  • 1/2 cup barbecue sauce (plus extra for drizzling)

Cheese and Vegetables

  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 small red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro


Instructions

  1. Preheat and Prepare Flatbreads: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Place the flatbreads on the baking sheet and lightly brush each with olive oil, seasoning with salt and pepper as desired.
  2. Mix Chicken with Barbecue Sauce: In a bowl, toss the shredded rotisserie chicken with the 1/2 cup barbecue sauce until the chicken is fully coated and evenly distributed.
  3. Assemble the Flatbreads: Divide the barbecue-coated chicken evenly over the two flatbreads. Sprinkle the shredded mozzarella and cheddar cheeses evenly on top of the chicken, then scatter the thinly sliced red onions over the cheese layers.
  4. Bake: Place the assembled flatbreads in the preheated oven and bake for 8 to 10 minutes, or until the cheese is melted, bubbly, and the edges of the flatbreads are golden and crispy.
  5. Garnish and Serve: Remove the flatbreads from the oven. Garnish with chopped fresh cilantro and drizzle additional barbecue sauce over the top if desired. Slice into portions and serve warm.
