Description

This Reuben Dip is a warm, creamy, and cheesy appetizer inspired by the classic Reuben sandwich. Featuring corned beef, sauerkraut, Swiss cheese, and a blend of cream cheese, sour cream, and mayonnaise, it delivers all the iconic flavors in a rich, baked spread perfect for parties or game day. Serve it hot alongside rye bread, crackers, or pretzels for a crowd-pleasing treat.

Ingredients

Scale

Dip Ingredients

  • 8 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 1/2 cups shredded Swiss cheese
  • 1 cup chopped corned beef
  • 3/4 cup sauerkraut (drained and patted dry)
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Serving

  • Rye bread or crackers for serving

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) to ensure it’s fully heated for baking the dip evenly.
  2. Mix the Base: In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, and Dijon mustard. Stir well until the mixture is smooth and creamy.
  3. Add the Flavor Components: Fold in the shredded Swiss cheese, chopped corned beef, drained sauerkraut, garlic powder, salt, and pepper. Mix thoroughly to evenly distribute all ingredients throughout the dip.
  4. Transfer and Spread: Spoon the dip mixture into a baking dish or an oven-safe skillet, spreading it out evenly for uniform cooking.
  5. Bake the Dip: Place the dish in the preheated oven and bake for 20 to 25 minutes. The dip should be hot, bubbly, and have a lightly golden top when done.
  6. Optional Broil: For a toasted finish, broil the dip for the last 2 minutes of baking until the top is nicely browned.
  7. Cool Slightly and Serve: Remove from the oven and let the dip cool slightly before serving to avoid burns. Serve warm with slices of rye bread, crackers, or pretzels.

Notes

  • For an extra toasty top, broil the dip for the last 2 minutes of baking.
  • You can substitute pastrami for corned beef if preferred.
  • This dip can be made ahead of time and refrigerated unbaked; bake just before serving for convenience.
  • To keep the dish gluten-free, serve with gluten-free bread or crackers.
