Meat and Aromatics

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced

Tomato and Beans

  • 1 (15-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed

Spices and Liquids

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • ¼ cup water or beef broth


Instructions

  1. Heat olive oil and cook meat and onions: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and diced onion. Cook until the meat is browned and the onion is softened, about 6–8 minutes. Drain excess fat if needed.
  2. Add garlic: Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Add tomatoes, beans, spices, and liquid: Add the diced tomatoes, tomato sauce, kidney beans, black beans, chili powder, ground cumin, smoked paprika, salt, black pepper, cayenne pepper (if using), and water or beef broth. Stir well to combine.
  4. Simmer the chili: Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 20–25 minutes, stirring occasionally to prevent sticking.
  5. Adjust seasoning and serve: Taste the chili and adjust seasoning if needed. Serve hot with your favorite toppings such as shredded cheese, sour cream, chopped green onions, or crackers.

Notes

  • Chili stores well and tastes even better the next day.
  • For extra texture and flavor, add corn, bell peppers, or jalapeños.
