Instructions
- Crush Oreos: In a food processor, pulse the Golden Oreos until they form fine crumbs. Set aside ½ cup of the crumbs for garnish, if desired.
- Mix filling: In a large bowl, combine the remaining Oreo crumbs with softened cream cheese, pumpkin purée, and pumpkin pie spice. Stir thoroughly until the mixture is smooth and evenly blended.
- Form balls: Roll the mixture into 1-inch diameter balls using your hands. Place the balls on a baking sheet lined with parchment paper. Chill them in the freezer for about 30 minutes until they become firm.
- Melt white chocolate: Gently melt the white chocolate chips or candy melts either in the microwave using 30-second bursts with stirring in between, or using a double boiler on the stovetop, until fully smooth.
- Dip balls: One at a time, dip the chilled pumpkin Oreo balls into the melted white chocolate, allowing any excess to drip off. Place them back onto the parchment-lined baking sheet immediately.
- Garnish: While the coating is still wet, sprinkle the tops with crushed graham cracker crumbs and reserved Oreo crumbs for extra texture and decoration.
- Chill to set: Transfer the coated balls to the refrigerator and chill until the white chocolate is completely set and firm before serving.
