Instructions
- Heat Skillet: Heat a large skillet over medium heat to prepare for cooking the ground beef.
- Add Olive Oil: Add the olive oil to the skillet and allow it to heat up to coat the pan lightly.
- Cook Ground Beef: Add the ground beef to the hot skillet.
- Brown Beef: Cook the beef, breaking it apart with a wooden spoon, until it is browned and fully cooked through.
- Drain Fat: Drain any excess fat from the skillet if necessary to avoid greasy texture.
- Add Seasoning and Water: Stir in the taco seasoning packet and water into the beef.
- Simmer Beef: Mix well and let simmer for about 5 minutes until the beef is fully coated and the sauce thickens.
- Heat Rice: While beef is cooking, warm the cooked rice in a separate pan or microwave until hot.
- Heat Corn: In another pan, heat the corn kernels over medium heat for 3-4 minutes until warmed through.
- Sauté Vegetables: Using the same pan, sauté the diced red onion, bell pepper, and tomatoes for 4-5 minutes until they begin to soften.
- Assemble Base: Place a generous portion of warm rice into each serving bowl as a base.
- Add Beef: Top the rice with the seasoned ground beef mixture evenly.
- Add Vegetables and Corn: Layer the sautéed vegetables and heated corn kernels on top of the ground beef.
- Add Black Beans: Spoon the drained and rinsed black beans over the vegetable and beef layer.
- Add Cheese: Sprinkle shredded cheddar cheese over the bowl, allowing it to melt slightly from the heat.
- Add Sour Cream: Place a dollop of sour cream on each bowl for creaminess.
- Garnish: Top with freshly chopped cilantro for added aroma and color.
- Add Lime: Squeeze fresh lime wedges over the bowl to add bright, tangy flavor.
- Add Salsa: Finish by spooning salsa on top of the assembled bowl.
- Serve: Serve immediately and enjoy your flavorful Pioneer Woman burrito bowl!
Notes
- If preferred, substitute ground beef with ground turkey or chicken for a leaner protein option.
- For a vegetarian version, omit the ground beef and increase black beans or use a plant-based ground meat substitute.
- Use freshly cooked rice for best texture; leftover rice can be used but may need reheating carefully to avoid dryness.
- Adjust taco seasoning amount according to taste and dietary restrictions on sodium.
- Add avocado slices or guacamole for extra creaminess and healthy fats.
- Use gluten-free taco seasoning if required to make the dish gluten-free.
- Lime juice can be adjusted or omitted depending on personal preference.
