Description

This fresh and vibrant Peach Salsa recipe combines ripe peaches with juicy tomatoes, bell peppers, jalapenos, and cilantro for a perfect balance of sweet and spicy flavors.   • 1 lb tomatoes, diced
  • 1 bell pepper (4 oz), seeded and finely diced
  • 2 jalapenos, seeded and finely diced
  • 1 medium onion, finely diced

Fruit

  • 1 1/2 lbs peaches, diced (no need to peel)

Herbs & Seasonings

  • 1/2 bunch cilantro, chopped
  • 2 Tbsp lime juice
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp freshly ground black pepper (or to taste)


Instructions

  1. Prepare Tomatoes: Chop the tomatoes into small pieces and transfer them to a large mixing bowl to form the salsa base.
  2. Prepare Vegetables: Seed and finely dice the bell pepper and jalapenos. Finely dice the onion. Add all these finely chopped vegetables to the bowl with the tomatoes.
  3. Dice Peaches: Dice the peaches into slightly larger pieces to give them prominence in the salsa. No need to peel the peaches as the skin adds color and texture. Add the diced peaches to the bowl.
  4. Mix Ingredients: Add the chopped cilantro, lime juice, salt, and freshly ground black pepper to the bowl. Gently fold all ingredients together until well combined. Taste and adjust salt and pepper as desired. Serve fresh and enjoy!
