Description

This Peach Bellini recipe is a refreshing and elegant cocktail made by blending frozen peaches with peach liqueur and fresh lemon juice, then topped with chilled Prosecco. Perfect for brunches, celebrations, or a light and fruity drink to enjoy any time.

Ingredients

Scale

Peach Puree

  • 8 ounces frozen peaches, partially defrosted
  • 3 ounces peach liqueur
  • 1 ounce fresh lemon juice

Bubbles

  • 1 750 ml bottle Prosecco, chilled

Instructions

  1. Prepare the Peach Puree: Place the partially defrosted frozen peaches, peach liqueur, and fresh lemon juice in a blender. Blend until smooth. Depending on how solid the peaches are, you may need to pulse a few times or scrape the sides down to ensure even blending.
  2. Portion the Puree: Evenly divide the peach puree among six flute glasses. Each glass should receive about 2 ounces of the puree. This forms the flavorful base of the cocktail.
  3. Add Prosecco and Serve: Carefully top each glass with about 4 ounces of chilled Prosecco. If you like, gently stir the mixture once to combine the peach puree with the sparkling wine. Serve immediately to enjoy the bubbly freshness.

Notes

  • Use frozen peaches that are only partially thawed for easier blending and to maintain a chilled cocktail.
  • For a non-alcoholic version, substitute the peach liqueur with peach nectar and use sparkling grape juice instead of Prosecco.
  • Chill your glasses in the freezer for about 10 minutes beforehand to keep the drink cold longer.
  • If peaches are too frozen to blend smoothly, allow them to thaw slightly before blending, or cut them into smaller pieces.
  • This recipe can be easily doubled or tripled for larger gatherings.
