Ingredients
Scale
Dressing
- 1 tablespoon olive oil
- 1/2 tablespoon lemon juice
- 1/2 teaspoon honey
- 1/2 teaspoon Dijon mustard
Salad
- 1 (5 ounce) package arugula
- 1/2 cup freshly grated Parmesan cheese (plus more if needed)
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Grate or shave the Parmesan cheese: For the best flavor, use a wedge of Parmesan cheese instead of pre-grated. Grate it finely using a Microplane grater or shave it with a potato/vegetable peeler to achieve a light and fluffy texture.
- Make the dressing: In a small bowl, whisk together olive oil, lemon juice, honey, and Dijon mustard until well combined and emulsified.
- Toss the salad: Place the arugula in a salad bowl, pour the dressing over it, and add the freshly grated Parmesan cheese. Toss gently to coat all the leaves evenly. Taste and adjust seasoning by adding more olive oil, lemon juice, salt, or pepper as desired.
- Serve immediately: The salad wilts quickly once dressed, so enjoy it right away for the freshest taste and texture. Optionally, grate or shave additional Parmesan over the top before serving.
Notes
- Using a fresh wedge of Parmesan cheese greatly enhances the flavor compared to pre-grated options.
- The salad is best served immediately after tossing to prevent wilting.
- You can adjust the dressing amounts slightly to suit your taste preferences.
- For a richer salad, consider adding toasted pine nuts or sliced almonds as a topping.
