- 2 cups cooked white rice (preferably cold, day-old)
- 1/2 lb thinly sliced beef (such as flank steak)
- 1 medium yellow onion (thinly sliced)
- 2 green onions (chopped)
- 2 cloves garlic (minced)
- 2 eggs (lightly beaten)
Sauces & Oils
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
Seasonings
- 1/2 tsp ground black pepper
- Salt to taste
Instructions
- Cook the beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add thinly sliced beef and cook for 2–3 minutes until browned and just cooked through. Remove beef from the pan and set aside.
- Sauté the onions: In the same pan, add the thinly sliced yellow onion and cook for 4–5 minutes until softened and slightly caramelized.
- Add garlic: Stir in minced garlic and cook for about 30 seconds until fragrant, careful not to burn it.
- Scramble the eggs: Push the onions to one side of the pan, pour in the beaten eggs and scramble until just set.
- Add rice and combine: Add the cold, day-old rice to the pan. Break up any clumps with a spatula and stir everything together.
- Add beef and seasonings: Return the cooked beef to the pan. Stir in soy sauce, oyster sauce, sesame oil, and ground black pepper. Stir-fry for another 2–3 minutes, ensuring everything is heated through and well combined.
- Adjust seasoning and garnish: Taste and add salt if needed. Garnish with chopped green onions and serve hot.
Notes
- Day-old rice works best for fried rice because it’s less sticky and fries better.
- Add frozen peas or diced carrots for extra vegetables and color.
- Thinly sliced beef cooks quickly and stays tender; avoid overcooking to keep it juicy.
