Instructions

  1. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Season the bite-sized chicken pieces with salt, black pepper, and Italian seasoning. Add the chicken to the skillet and cook for 5 to 7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté onions and garlic: In the same skillet, add the diced onion and cook for 2 to 3 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds to release its aroma without burning.
  3. Cook the gnocchi: Add the shelf-stable potato gnocchi to the skillet along with the chicken broth and heavy cream. Bring the mixture to a simmer and cook for 5 to 6 minutes, stirring occasionally, until the gnocchi are soft and tender and the sauce begins to thicken.
  4. Combine and finish: Return the cooked chicken to the skillet. Stir in the baby spinach, grated Parmesan cheese, and crushed red pepper flakes if using. Cook for another 2 to 3 minutes until the spinach is wilted and everything is heated through. Taste and adjust seasoning as needed.
