Ingredients
Scale
Chicken and Seasoning
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breast, cut into bite-sized pieces
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
Vegetables and Aromatics
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup baby spinach
Main Ingredients
- 1 (16 oz) package shelf-stable potato gnocchi
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
Optional and Garnish
- ½ teaspoon crushed red pepper flakes (optional)
- Chopped fresh parsley for garnish
Instructions
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Season the bite-sized chicken pieces with salt, black pepper, and Italian seasoning. Add the chicken to the skillet and cook for 5 to 7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- Sauté onions and garlic: In the same skillet, add the diced onion and cook for 2 to 3 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds to release its aroma without burning.
- Cook the gnocchi: Add the shelf-stable potato gnocchi to the skillet along with the chicken broth and heavy cream. Bring the mixture to a simmer and cook for 5 to 6 minutes, stirring occasionally, until the gnocchi are soft and tender and the sauce begins to thicken.
- Combine and finish: Return the cooked chicken to the skillet. Stir in the baby spinach, grated Parmesan cheese, and crushed red pepper flakes if using. Cook for another 2 to 3 minutes until the spinach is wilted and everything is heated through. Taste and adjust seasoning as needed.
- Garnish and serve: Remove the skillet from heat and sprinkle with chopped fresh parsley. Serve warm for a comforting and satisfying meal.
Notes
- Substitute half-and-half for heavy cream for a lighter sauce.
- Add mushrooms, sun-dried tomatoes, or peas for extra vegetables and flavor.
- For a crispier texture, pan-sear the gnocchi separately before adding broth and cream.
- This dish can be made nut-free as specified, but ensure other ingredients do not contain nuts.
