Cookie Base:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Additional Mix-ins:
- 3 cups old-fashioned rolled oats
- 1 1/2 cups raisins
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- Mix wet ingredients: In a large bowl, cream together butter, brown sugar, and granulated sugar. Add eggs one at a time, then mix in vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Combine wet and dry ingredients: Gradually mix dry ingredients into wet until just combined. Stir in oats, raisins, and walnuts if using.
- Bake: Spread dough into pan and bake for 25–30 minutes until golden brown. Cool completely before slicing into squares.
Notes
- You can substitute raisins with dried cranberries or chocolate chips.
- For chewier bars, slightly underbake and cool in the pan.
