Cookie Base:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Additional Mix-ins:

  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups raisins
  • 1/2 cup chopped walnuts (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Mix wet ingredients: In a large bowl, cream together butter, brown sugar, and granulated sugar. Add eggs one at a time, then mix in vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Combine wet and dry ingredients: Gradually mix dry ingredients into wet until just combined. Stir in oats, raisins, and walnuts if using.
  5. Bake: Spread dough into pan and bake for 25–30 minutes until golden brown. Cool completely before slicing into squares.

Notes
