1 cup pitted Medjool dates
- 1 cup raw almonds
- 1/2 cup unsweetened shredded coconut
- 2 tablespoons chia seeds
- 2 tablespoons natural peanut butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 2 tablespoons unsweetened cocoa powder (optional)
- additional shredded coconut or cocoa powder for rolling (optional)
Instructions
- Combine Dates and Almonds: Add the dates and almonds to a food processor and pulse until finely chopped and combined.
- Add Remaining Ingredients: Add the shredded coconut, chia seeds, peanut butter, vanilla extract, sea salt, and cocoa powder (if using). Process until the mixture forms a sticky dough.
- Form Balls: Scoop out tablespoon-sized portions and roll into balls. Optionally, coat each ball with extra shredded coconut or cocoa powder.
- Chill and Serve: Refrigerate the balls for at least 30 minutes before serving. Store leftovers in the fridge in an airtight container.
Notes
- You can substitute almonds with cashews or walnuts.
- For a nut-free version, use sunflower seed butter and pumpkin seeds.
- Add a few tablespoons of protein powder for an extra boost.
