Description

These No-Bake Rocky Road Squares combine rich semi-sweet chocolate with chewy mini marshmallows, crunchy graham crackers, and chopped nuts for an easy, delicious treat. Perfect for holidays or anytime you want a quick sweet snack without turning on the oven.

Ingredients

Scale

Chocolate Mixture

  • 2 cups semi-sweet chocolate chips
  • 1/2 cup unsalted butter
  • 1/4 cup light corn syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Mix-Ins

  • 2 cups mini marshmallows
  • 1 cup chopped graham crackers or digestive biscuits
  • 3/4 cup chopped walnuts or almonds

Instructions

  1. Prepare the pan: Line an 8×8-inch pan with parchment paper to prevent sticking and allow easy removal of the squares later.
  2. Melt chocolate mixture: In a large saucepan over low heat, melt together the semi-sweet chocolate chips, butter, and corn syrup, stirring continuously until smooth and fully combined.
  3. Add flavorings: Remove the saucepan from heat and stir in the vanilla extract and salt. Allow the mixture to cool slightly for about 5 minutes to prevent melting the marshmallows during the next step.
  4. Combine with mix-ins: Gently fold in the mini marshmallows, chopped graham crackers, and chopped nuts, ensuring everything is evenly coated with the chocolate mixture.
  5. Press into pan: Transfer the mixture into the prepared pan and press down firmly with a spatula to create an even layer and smooth the top.
  6. Chill until set: Refrigerate the pan for at least 2 hours or until the mixture is firm and set.
  7. Cut and serve: Once chilled and firm, remove from the fridge, lift out of the pan using the parchment paper, cut into 16 squares, and serve.

Notes

  • Store the squares in the fridge for up to 1 week for best freshness or freeze for longer storage.
  • Feel free to swap the nuts or crackers with your favorites like pretzels, dried fruit, or cereal to customize the flavor and texture.
