For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Filling:
- 2 cups fresh blackberries
- 2 tablespoons lemon juice
- 1/2 cup powdered sugar
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Instructions
- Prepare the Crust: In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and refrigerate.
- Make the Blackberry Puree: Blend blackberries with lemon juice. Strain and set aside.
- Prepare the Filling: Beat cream cheese until smooth. Add powdered sugar, sour cream, and vanilla. Fold in blackberry puree.
- Whip the Cream: In a separate bowl, whip heavy cream to stiff peaks. Fold into the cream cheese mixture.
- Assemble the Cheesecake: Pour filling over crust and refrigerate for at least 6 hours.
- Garnish and Serve: Top with extra blackberries before serving.
Notes
- For a brighter color, add natural purple food coloring.
- You can use frozen blackberries, thawed and drained, as well.
