Description
This Mexican Street Corn White Chicken Chili is a creamy and flavorful twist on traditional chili, combining the delicious flavors of street corn with tender chicken and white beans. Perfect for a cozy night in or for feeding a crowd.

For the chili:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (4 oz) diced green chiles
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (15 oz) sweet corn, drained (or 1 cup frozen corn)
- 2 cups cooked shredded chicken (rotisserie works great)
- 2 cups chicken broth
- 1/2 cup sour cream
For serving:
- 1/2 cup crumbled cotija or feta cheese
- 1/4 cup chopped fresh cilantro
- juice of 1 lime
- optional toppings: avocado, extra cheese, crushed tortilla chips, jalapeños
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and sauté for 4–5 minutes until softened.
- Stir in the garlic, cumin, chili powder, smoked paprika, oregano, salt, and pepper. Cook for 1 minute to bloom the spices.
- Add the green chiles, white beans, corn, shredded chicken, and chicken broth. Bring to a simmer and cook uncovered for 15–20 minutes, allowing flavors to blend and the chili to slightly thicken.
- Reduce heat to low and stir in the sour cream, cotija cheese, cilantro, and lime juice. Stir well until creamy and heated through. Taste and adjust seasoning as needed.
- Serve hot with your favorite toppings like avocado slices, crushed tortilla chips, more cheese, or sliced jalapeños.
Notes
- For extra street corn flavor, use grilled or charred corn.
- Want it spicier? Add diced jalapeños or hot sauce.
- This chili can also be made in a slow cooker or Instant Pot.
