Cheese and Garnish
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Season Chicken: In a bowl, toss the chicken breasts with olive oil, minced garlic, oregano, basil, paprika, salt, black pepper, and optional red pepper flakes to coat well and infuse flavor.
- Prepare Vegetables: Spread the sliced zucchini, halved cherry tomatoes, and sliced red onion evenly in the greased baking dish to form a bed for the chicken.
- Assemble and Bake: Place the seasoned chicken breasts on top of the vegetables and bake in the preheated oven for 25 to 30 minutes, until the chicken is fully cooked through and juices run clear.
- Add Cheese and Broil: Remove the dish from the oven, sprinkle shredded mozzarella and crumbled feta cheese over the chicken and vegetables, then place under the broiler for 3 to 5 minutes until the cheese melts and turns golden brown.
- Garnish and Serve: Sprinkle fresh chopped parsley on top for a burst of color and freshness, then serve the bake warm for a satisfying meal.
Notes
- For extra flavor, marinate the chicken for 30 minutes prior to baking.
- You can substitute chicken thighs for breasts if preferred.
- Add other Mediterranean vegetables like bell peppers or eggplant for variety.
- Adjust red pepper flakes to your desired level of heat or omit for a milder dish.
- Serve with crusty bread or a side salad to complete the meal.
