Description

These Mediterranean chicken patties are packed with flavor from sun-dried tomatoes, feta cheese, olives, and herbs. Juicy and delicious, they are perfect for a quick and easy meal.

Chicken Patties:

  • 1 pound ground chicken
  • 1/3 cup finely chopped red onion
  • 1/4 cup chopped sun-dried tomatoes (drained)
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped kalamata olives
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)


Instructions

  1. Mix Ingredients: In a large bowl, combine ground chicken, red onion, sun-dried tomatoes, feta cheese, olives, garlic, parsley, oregano, salt, and pepper. Mix gently until just combined.
  2. Shape Patties: Divide the mixture into 4 portions and shape into patties about 1/2-inch thick.
  3. Cook: Heat olive oil in a skillet over medium heat. Cook patties for 4–5 minutes per side until golden brown and internal temperature reaches 165°F.
  4. Rest and Serve: Let patties rest for a few minutes before serving. Enjoy with tzatziki, in pita bread, or over a salad.

Notes

  • You can prepare ahead and refrigerate for up to 1 day before cooking.
  • To make gluten-free, serve with gluten-free pita or over greens.
  • Works well in an air fryer at 375°F for 10–12 minutes.
