Chicken Patties:
- 1 pound ground chicken
- 1/3 cup finely chopped red onion
- 1/4 cup chopped sun-dried tomatoes (drained)
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped kalamata olives
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
Instructions
- Mix Ingredients: In a large bowl, combine ground chicken, red onion, sun-dried tomatoes, feta cheese, olives, garlic, parsley, oregano, salt, and pepper. Mix gently until just combined.
- Shape Patties: Divide the mixture into 4 portions and shape into patties about 1/2-inch thick.
- Cook: Heat olive oil in a skillet over medium heat. Cook patties for 4–5 minutes per side until golden brown and internal temperature reaches 165°F.
- Rest and Serve: Let patties rest for a few minutes before serving. Enjoy with tzatziki, in pita bread, or over a salad.
Notes
- You can prepare ahead and refrigerate for up to 1 day before cooking.
- To make gluten-free, serve with gluten-free pita or over greens.
- Works well in an air fryer at 375°F for 10–12 minutes.
