  • 2 1/2 cups all-purpose flour (plus more for dusting)

Maple Glaze

  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1 tablespoon melted butter
  • 1/2 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Activate the yeast: In a large bowl or stand mixer, combine the warm milk and sugar. Sprinkle the active dry yeast over the top and let sit for 5 to 10 minutes until the mixture becomes foamy, indicating the yeast is active.
  2. Make the dough: Add the melted butter, salt, vanilla extract, egg, and 2 cups of the flour to the yeast mixture. Mix until a soft dough forms, then gradually knead in the remaining 1/2 cup flour as needed until the dough is smooth and elastic, about 5 to 7 minutes.
  3. Allow the dough to rise: Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for approximately 1 hour or until the dough has doubled in size.
  4. Shape the beaver tails: Punch down the dough and divide it into 8 equal pieces. On a floured surface, roll each piece into an oval shape resembling a beaver tail, about 1/4 inch thick.
  5. Heat the oil and fry: Heat 2 to 3 inches of vegetable oil in a deep skillet or pot to 350°F (175°C). Fry each shaped dough piece one at a time for 1 to 2 minutes on each side, until golden brown and puffed. Remove and drain on paper towels.
  6. Prepare the maple glaze: In a bowl, whisk together the maple syrup, powdered sugar, melted butter, vanilla extract, and a pinch of salt until smooth and well combined.
