- 3/4 cup buttermilk
- 1/4 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
Additional Ingredients
- 1 cup fresh mango, peeled and diced
- Butter or oil for cooking
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.
- Combine Wet Ingredients: In a separate bowl, whisk the buttermilk, milk, egg, melted butter, and vanilla extract until smooth and thoroughly mixed.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix to keep the pancakes tender.
- Add Mango: Carefully fold in the diced fresh mango pieces to incorporate them without breaking them down.
- Heat Skillet: Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil to prevent sticking.

Notes
- For enhanced mango flavor, add 1 tablespoon of mango puree to the batter before cooking.
- Buttermilk can be substituted with plain yogurt or milk combined with a splash of vinegar for similar results.
- These pancakes freeze well; reheat frozen pancakes in a toaster or microwave for convenience.
