- 4 boneless, skinless chicken breasts
Marinade
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Prepare the marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chopped parsley, thyme leaves, rosemary, salt, and black pepper until well combined.
- Marinate the chicken: Place the chicken breasts in a large resealable bag or a shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes, or up to 4 hours to allow the flavors to infuse.
- Preheat the grill: Heat your grill to medium-high heat, ensuring it’s well oiled to prevent sticking.
- Grill the chicken: Remove the chicken from the marinade, letting any excess drip off. Place the chicken on the grill and cook for 5 to 6 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has clear grill marks.
- Rest the chicken: Remove the grilled chicken from the heat and let it rest for 5 minutes to redistribute the juices before slicing or serving.
