Instructions
- Preheat the oven. Set your oven to 375°F (190°C) to warm it up for baking the roll ups to melty and golden perfection.
- Sauté the vegetables. Heat olive oil in a large skillet over medium heat. Add the sliced green and red bell peppers, onion, and mushrooms. Cook, stirring occasionally, until the vegetables have softened, which should take about 5 to 6 minutes.
