Description

Leprechaun Bites are delightful bite-sized cookies perfect for St. Patrick’s Day or any festive occasion. These colorful treats feature a buttery dough studded with green and white sprinkles and mini chocolate chips. A hint of vanilla adds extra flavor, making these cookies a fun and tasty addition to any dessert table.

Ingredients

Scale

Dough:

  • 1 cup unsalted butter (softened)
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • Optional: green food coloring

Additional:

  • 1/2 cup green and white sprinkles
  • 1/2 cup mini chocolate chips

Instructions

  1. Cream Butter and Sugar: In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  2. Mix in Vanilla: Add the vanilla extract to the butter mixture and mix well.
  3. Add Dry Ingredients: Gradually add the flour and salt, stirring until a soft dough forms.
  4. Tint Dough: If desired, add a few drops of green food coloring and mix until evenly tinted.
  5. Add Mix-Ins: Fold in the sprinkles and mini chocolate chips.
  6. Shape and Chill: Scoop the dough into small 1-inch balls, flatten slightly, and chill in the refrigerator for 30 minutes.
  7. Bake: Preheat the oven to 350°F (175°C). Bake the cookies for 10–12 minutes or until lightly golden.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra crunch, use sanding sugar or festive candy bits instead of regular sprinkles.
  • These bites freeze well—store in an airtight container for up to 1 month.
