Ingredients
Scale
Meat
- 1 lb lean ground beef
Liquids & Broth
- 1 (10.5 oz) can condensed chicken broth
- 2 ½ cups milk
Seasonings
- 1 ½ teaspoons salt
- 1 ½ teaspoons pepper
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
Grains & Vegetables
- 2 cups long-grain white rice
- 1 (10.75 oz) can condensed tomato soup
- 1 (8.75 oz) can corn, drained
Dairy
- 2 cups shredded mozzarella and cheddar cheese blend
Other
- Butter or oil for sautéing
Instructions
- Brown the ground beef: Set the Instant Pot to “Sauté Normal” mode. Add butter or oil, then add the lean ground beef and cook until browned, breaking it apart as it cooks to ensure even browning.
- Add liquids and seasonings: Stir in the condensed chicken broth, milk, salt, pepper, onion powder, and garlic powder thoroughly to combine with the browned beef for full flavor.
- Add rice and toppings: Add the long-grain white rice to the pot, pressing it down gently to submerge it in the liquid. Carefully layer the condensed tomato soup and drained corn on top without stirring to prevent disrupting the layering.
- Pressure cook: Secure the Instant Pot lid and set the valve to the “Sealing” position. Cook on High Pressure for 7 minutes to fully cook the rice and meld the flavors.
- Quick release pressure: Immediately perform a quick release by turning the steam release handle to “Venting.” Once all pressure is released, carefully remove the lid and stir the contents to mix the layers together.
- Add cheese and serve: Stir in the shredded mozzarella and cheddar cheese blend until melted and creamy. Serve the cheesy ground beef and rice hot for a satisfying meal.
Notes
- Use lean ground beef to reduce excess grease in the dish.
- If you prefer, substitute the corn with frozen peas or mixed vegetables.
- For a spicier flavor, add a pinch of red pepper flakes or a dash of hot sauce before cooking.
- To make it lower in fat, use low-fat milk and reduce the cheese amount or opt for a low-fat cheese blend.
- Be careful not to stir the tomato soup and corn into the rice before pressure cooking to prevent burning or sticking at the bottom.
