Homemade Almond Joy is a delightful no-bake treat combining shredded coconut, sweetened condensed milk, and roasted almonds enrobed in rich dark chocolate.   • 1 1/4 cup shredded sweetened coconut
  • 1/4 cup sweetened condensed milk
  • 1/2 teaspoon vanilla extract

Chocolate Coating

  • 2 cups dark or semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Topping

  • 18 roasted almonds


Instructions

  1. Prepare the Coconut Filling: In a medium mixing bowl, combine the shredded sweetened coconut, sweetened condensed milk, and vanilla extract. Stir until fully mixed to create a sticky, cohesive filling.
  2. Melt the Chocolate: Place the chocolate chips and coconut oil in a microwave-safe bowl. Microwave on high for 1 minute, then stir well until the mixture is smooth and fully melted. This will serve as the base and topping chocolate.
  3. Assemble Almond Joys: Arrange 18 mini cupcake liners on a cookie sheet. Spoon a heaping teaspoon of the melted chocolate into the bottom of each liner. Then, add a scoop of the coconut filling mixture on top of the chocolate layer. Press one roasted almond into the center of each coconut mound. Finally, cover the almond and coconut with the remaining melted chocolate to fully enrobe the filling.
  4. Set the Almond Joys: Place the tray of assembled treats in the refrigerator and chill until the chocolate is set and firm, approximately 30 minutes. Once set, remove from fridge and enjoy or store in an airtight container in the fridge.

  • Use mini cupcake liners to keep portions uniform and prevent sticking.
