Ingredients
Scale
Vegetables and Legumes
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup diced potatoes
- 1 cup cooked lentils
Liquids and Seasonings
- 1 tbsp olive oil
- 4 cups vegetable broth
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper, to taste
Instructions
- Prepare the base: Heat olive oil in a large pot over medium heat. Add the diced onion, minced garlic, diced carrots, and diced celery. Sauté the mixture until the vegetables are softened, about 5-7 minutes.
- Add main ingredients: Stir in the diced potatoes, cooked lentils, vegetable broth, tomato paste, and thyme. Bring the stew to a boil.
- Simmer the stew: Once boiling, reduce the heat to low and let the stew simmer gently for 20 to 25 minutes, allowing the flavors to meld and the potatoes to cook through.
- Season and serve: Taste the stew and season with salt and pepper as desired. Serve hot, ideally accompanied by crusty bread for a complete meal.
Notes
- For a thicker stew, simmer uncovered to reduce the liquid further.
- You can substitute lentils with chickpeas or beans for variation.
- Add leafy greens like kale or spinach during the last 5 minutes of cooking for extra nutrition.
- If you prefer a spicier stew, add a pinch of crushed red pepper flakes.
