- 1 cup plain Greek yogurt
- 1/2 cup grated Parmesan cheese
- 1/2 cup part-skim mozzarella cheese, shredded
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1 cup frozen chopped spinach, thawed and drained
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil spray or drizzle, for baking
Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.
- Prepare chicken: Place the chicken breasts in the baking dish, season with salt and pepper.
- Mix topping: In a medium bowl, combine Greek yogurt, Parmesan, mozzarella, artichokes, spinach, garlic, onion powder, salt, and pepper.
- Top chicken: Spread the spinach artichoke mixture over each chicken breast.
- Bake: Bake for 25–30 minutes until chicken is cooked through and topping is golden.
