Ingredients
Scale
Cheese Base
- 1 pound Cooper Sharp White Cheese, cut into cubes
- 1/4 cup milk
- 1 tablespoon butter
Flavorings
- 4.5 ounces green chilies, drained
- 1/2 teaspoon cumin
- 1 teaspoon pimentos
- 1/2 teaspoon paprika
- 1/2 tablespoon flour
- 6 drops green neon food coloring (optional, for a spooky look)
Instructions
- Prepare the base: In a small, thick-walled saucepan, melt the butter over low-medium heat. Add the milk and stir to combine.
- Melt the cheese: Add the cubed Cooper Sharp White Cheese to the saucepan and stir constantly for about 5 minutes, or until the cheese is completely melted and smooth, creating a creamy base.
- Add spices and chilies: Stir in the cumin, paprika, pimentos, and drained green chilies until well combined to infuse the queso with bold flavors.
- Thicken the queso: Sprinkle the flour into the mixture and stir well to thicken the dip. Continue cooking on low heat, stirring frequently to prevent clumping and ensure a smooth texture.
- Add Halloween touch: For a festive look, add 6 drops of green neon food coloring, stirring until the queso turns a spooky green hue.
- Serve and maintain consistency: Keep the dip on low heat to maintain its creamy consistency. Serve warm with tortilla chips, veggies, or crackers. If the dip cools and hardens, reheat in short microwave bursts before serving.
Notes
- If the dip cools and thickens too much, reheat gently either on the stovetop or in the microwave to restore creaminess.
- You can adjust the spice level by adding more or less cumin and paprika according to taste.
- For a vegetarian version, ensure the cheese and pimentos are free from animal rennet or additives.
- The green neon food coloring is optional but adds a festive Halloween vibe to the dip.
- Serve immediately for best texture, or keep warm on low heat while serving.
