Chicken Skewers:
- 1 1/2 pounds boneless, skinless chicken thighs (cut into 1-inch pieces)
Marinade:
- 1/2 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon red curry paste
- 1/4 teaspoon crushed red pepper flakes (optional)
- Chopped cilantro and lime wedges for serving
- Skewers (soaked in water if wooden)
Instructions
- Marinate the Chicken: In a bowl, mix coconut milk, soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, red curry paste, and red pepper flakes. Add chicken, coat well, cover, and marinate in the fridge for 1-8 hours.
- Grill the Skewers: Preheat grill to medium-high. Thread chicken onto skewers. Grill for 4-5 minutes per side until cooked through and charred.
- Serve: Rest skewers, then serve with cilantro and lime wedges.
Notes
- Pair with jasmine rice, peanut sauce, or cucumber salad.
- Adjust spice levels by increasing red curry paste or red pepper flakes.
- Can broil in oven if grilling is not an option.
