Chicken:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Additional Ingredients:
- 1 cup salsa verde (store-bought or homemade)
- 1 cup shredded pepper jack cheese
- Chopped fresh cilantro and lime wedges for serving
Instructions
- Preheat Grill: Preheat the grill to medium-high heat.
- Season Chicken: In a small bowl, mix olive oil, cumin, garlic powder, smoked paprika, salt, and black pepper. Rub the spice mixture over both sides of the chicken breasts.
- Grill Chicken: Grill the chicken for 5–7 minutes per side until fully cooked. In the last 2 minutes, spoon salsa verde over each chicken breast and top with shredded pepper jack cheese. Close the grill lid to melt the cheese.
- Rest and Serve: Remove from grill and let rest for 5 minutes. Serve topped with cilantro and lime wedges.
