Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry with paper towels to remove any excess moisture, ensuring better seasoning adherence and grilling.
  2. Oil the Chicken: Drizzle 1 tablespoon of olive oil over both chicken breasts and rub it evenly on both sides to coat thoroughly.
  3. Mix the Spices: In a small bowl, combine chili powder, garlic powder, ground cumin, paprika, salt, and black pepper to create the seasoning blend.
  4. Season the Chicken: Sprinkle the prepared spice mixture evenly over both sides of the chicken breasts and gently rub the spices in to coat completely.
  5. Preheat the Grill: Heat your grill or grill pan to medium-high, ensuring it is hot before placing the chicken on to achieve perfect grill marks.
  6. Grill the Chicken (Side 1): Place the chicken breasts on the grill and cook for about 6 to 7 minutes until grill marks form and the chicken releases easily from the surface.
  7. Grill the Chicken (Side 2): Flip the chicken and continue grilling for another 6 to 7 minutes until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked.
  8. Prepare Avocado Salsa – Avocado: While the chicken cooks, cut the avocado in half, remove the pit, scoop out the flesh, and dice it into bite-sized pieces.
  9. Prepare Avocado Salsa – Mix Ingredients: Add the diced avocado to a mixing bowl along with halved cherry tomatoes, finely chopped red onion, and chopped fresh cilantro.
