Ingredients
Scale
Chicken
- 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch cubes
Glaze & Marinade
- ¼ cup Dijon mustard
- 2 tbsp honey
- 1 tbsp whole grain mustard
- 1 tbsp olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
Other
- Fresh herbs (optional, for garnish)
- Small skewers or toothpicks
Instructions
- Make the glaze: In a bowl, whisk together Dijon mustard, honey, whole grain mustard, olive oil, minced garlic, salt, and pepper to create a smooth and flavorful glaze.
- Marinate chicken: Toss the chicken cubes in half of the prepared glaze, ensuring all pieces are evenly coated. Cover and refrigerate for 30 minutes to allow the flavors to penetrate the meat, which can be skipped if short on time.
- Assemble skewers: Thread the marinated chicken cubes onto small skewers or toothpicks, spacing pieces slightly apart for even cooking.
- Grill or broil: Cook the skewers over medium heat on a grill or under a broiler for 8 to 10 minutes. Turn occasionally to brown all sides evenly and cook through until the chicken is golden and no longer pink inside.
- Glaze & garnish: While the skewers are still hot, brush with the remaining glaze for extra flavor and moisture. Sprinkle with fresh herbs if desired.
- Serve warm: Serve the skewers warm, either as appetizers using toothpicks or over rice as a light and flavorful meal.
Notes
- Marinating the chicken for 30 minutes enhances the flavor but is optional.
- Use chicken thighs if you prefer juicier meat over breast.
- Fresh herbs such as parsley or thyme work well as garnish.
- Can be broiled indoors if a grill is not available.
- Ensure skewers are soaked in water if wooden to prevent burning on the grill.
