Ingredients
Scale
Vegetables
- 1 pound fresh green beans, trimmed
Seasonings and Oils
- 1 tablespoon salt (for blanching)
- 1 tablespoon unsalted butter
- 2 tablespoons olive oil
- 1/2 teaspoon black pepper
- Additional salt to taste
- 1 tablespoon lemon juice
Nuts and Aromatics
- 1/2 cup sliced almonds
- 2 cloves garlic, minced
Instructions
- Blanch the green beans: Bring a large pot of salted water to a boil. Add the trimmed green beans and blanch them for 3 to 4 minutes until they are just tender but still crisp. Drain the green beans and immediately transfer them to a bowl of ice water to halt the cooking process. Drain again and set aside.
- Toast the almonds: In a large skillet, heat the unsalted butter and olive oil over medium heat. Add the sliced almonds and toast them for 3 to 4 minutes, stirring frequently, until they turn golden brown and fragrant.
- Cook the garlic: Add the minced garlic to the skillet with the toasted almonds and cook for an additional 30 seconds until fragrant, making sure not to burn the garlic.
- Sauté the green beans: Add the blanched green beans to the skillet. Toss them well to coat with the buttery almond and garlic mixture. Cook for 2 to 3 minutes until the beans are heated through.
- Season and serve: Remove the skillet from heat. Drizzle the green beans with lemon juice, then season with black pepper and additional salt to taste. Serve warm.
Notes
- For added flavor, sprinkle a pinch of crushed red pepper flakes or grated Parmesan cheese on top just before serving.
- If using frozen green beans, make sure to thaw them completely and pat dry to avoid excess moisture during sautéing.
